A QUIETER WAY TO UNDERSTAND COFFEE.
Ground & Gauge
DRINK ATLAS / BLACK COFFEE

Espresso

The concentrated starting point for many café drinks. Dose and beverage weight are more useful brewing records than crema volume.

Make it at home.

  1. Use the dose your basket is designed for and distribute the grounds evenly.
  2. For an illustrative starting point, try 18 g of coffee and stop at 36 g of beverage. This is a 1:2 yield ratio, not a water-input ratio.
  3. Taste and adjust one variable at a time. Record dose, yield and time; do not treat a fixed shot time as a guarantee.

Follow your equipment instructions. Hot liquid and steam require care. Milk alternatives can change the texture.

A QUESTION OF PROPORTION

A serving.
Not a full vessel.

A small espresso belongs in a demitasse with generous headspace. This sketch uses a 30 ml serving in a 70 ml cup; the 18 g to 36 g recipe above is measured by mass, not volume.

Schematic capacity view. Amounts are illustrative serving volumes, including foam space; espresso recipe weights are separate. Café recipes and actual vessels vary.
